Braised Fennel With Onions and Peppers

Braised fennel is a stunning side dish, and so easy to make.

You will need

2 tbsp olive oil More products
2 large fennel bulbs, sliced thin, save fronds More products
2 onions, sliced thin into half moons More products
1 red bell pepper, cut into strips More products
1 stock cube More products
about 200ml water
2 cloves garlic, crushed More products
1 tbsp cumin seed More products
small handful basil, chopped

  • Heat the oil in a large skillet over medium to high heat. Add fennel, onion, and bell pepper and sauté for 6 minutes, stirring occasionally. You want to make sure all of the vegetables get a chance to be on the bottom of the pan. At this stage, there will be some caramelizing, but if you see too much browning your heat is probably too high.
  • Place the fennel seeds on a cutting board and gently press on them with the back of a chef's knife or rolling pin. You want to lightly break the seeds to release their flavor but not break them to bits or powder. Add the cumin seeds, stock cube, waters and garlic.
  • Cover, reduce heat and simmer for about 15 minutes or until the fennel is nice and tender. Stir in the basil and fennel fronds.
  • Serve warm or cold.
