About Bay Leaves

Fresh or dried bay leaves are used in cooking for their distinctive flavour and fragrance. The leaves are often used to flavour soups and stews and are a favourite in Mediterranean cuisine. The fresh leaves are very mild and do not develop their full flavour until several weeks after picking and drying.

Roasted Carrots and Salsifies Recipe

Summary: The simplest way to prepare salsify is to roast them, drizzled with some good quality olive oil, a whole garlic head, a few bay leaves and a small bunch of fresh thyme. Leave their very much edible skins on for extra nutrition, but if you do peel them, try to do as and soak them in cold water with a little vinegar to stop the delicate cream flesh from browning. Pair them with carrots or your favourite root vegetables for a lovely side dish.

Caraway Glazed Carrots Recipe

Summary: Carrots go really well with caraway. Maybe that is because they are actually from the same family ? Use baby carrots, regular sized carrots, rainbow carrots or purple haze carrots. True Christmas dinner stars.
