Also known as Cacao Liquor or Raw Cacao Mass, this Raw Cacao Paste is organic and incredibly useful. It is made by raw cacao beans, which are put into a pressing machine and squashed. This process creates heat, so to ensure the "Raw" status of the beans the machinery is cooled. This pressing causes the oil to separate and this is caught in a tray below. This sets and is used as Cacao butter. The remains are called the Cacao cake and this is broken up and made into powder, and used as Cacao powder. Then to create Cacao liquor the powder and oil are mixed together in their naturally occurring proportions.
To make your favourite chocolates, simply melt it gently (it's solid at room temperature) and add your favourite sweetener (like lucuma powder or agave nectar). It does make strong chocolate so if you prefer it mild, simply add cocoa butter until you get your desired sweetness. Cacao paste is naturally about 55% cacao butter and is an extremely smooth product great for use in any chocolate recipe. If you are looking for true dark chocolate, this is it. Not 80% or 90%, but 100% pure organic cacao.
This cacao product has been produced in a facility where temperatures can be monitored and maintained below 118°F throughout processing. The raw beans are fermented and sundried, stone milled into nibs, and then milled further to make a paste which is cold pressed into butter and powder. We have assurance from our supplier that during every stage of processing the temperature of the cacao bean inside its skin, and the temperature of the actual material being processed never exceed the accepted raw standard of 118f.
