Method

  • Cook the spring onions in a little olive oil in a non-stick frying pan until softened.
  • Add the eggs, feta, peas and mint, stir to combine then leave over the heat until the bottom has set.
  • Slide under the pre-heated grill to finish off.
  • Serve cut into wedges.

  • Frittatas are the ideal lunchbox food as they are tasty, filling and quick to make.
  • There are lots of alternative variations. Potatoes are often used to make a traditional Spanish omelette/frittata and can add some slow release carbs to your meal.
  • If you are cooking the omelette the night before then ensure its kept in the fridge overnight.
  • Whether you cook it in the morning or take it out if the fridge, remember cooked eggs don’t keep for long so don’t delay eating at lunch or keep it in the fridge at work.
