Vegan Egg Free Aquafaba Royal Icing Recipe

To make this Vegan Royal Icing, we simply replace the egg whites with Aquafaba, the liquid from canned chickpeas. This recipe can be used to ice a vegan Christmas cake along with egg-free marzipan.

500g or 4 cups icing sugar More products

Method

  • Start by whisking the aquafaba (chickpea water) until foamy. Ideally, use an electric mixer if you have one, as it will be faster.
  • Add the icing sugar and continue mixing on high speed, for about 3 minutes, or until the mixture is shiny and it forms soft peaks.
  • If you need the icing to be stiffer, add more icing sugar. Alternately, if you need to thin it, add more aquafaba.
  • To ice a traditional Christmas cake, spread a little warmed apricot jam over the cake, and cover it with rolled marzipan. Then, spread the royal icing over the cake, forming soft peaks. Finally, decorate with Christmas-themed ornaments.
