Traditional Bannocks Recipe

A traditional Scottish recipe of an unleavened oat bread, typically cooked on an iron griddle or skillet. Yet another way to get your oats!

You will need

225g wholemeal bread flour More products
110g self raising flour More products
120g rolled oats More products
2 tbsp caster sugar More products
2 tsp baking powder More products
1/2 tsp salt More products
2 tbsp melted butter Available only in our Edinburgh shops More products
180ml buttermilk OR Available only in our Edinburgh shops More products
180ml water

Method

  • Add all the dry ingredients to a bowl and stir together.
  • Add the melted butter, and half the water or buttermilk and stir.
  • Now add the remaining liquid a little at a time until the flour comes together into a stiff dough.
  • Pat into a rough circle and either bake on a greased baking sheet in an oven pre-heated to 200°C for about 25 minutes until well browned.
  • Alternatively place on an iron griddle or in a dry skillet on medium heat and cook for about 10 minutes per side.
  • Allow to cool a little, cut into segments and serve.
