Ingredients: 175g soft brown sugar; zest and juice of two large organic lemons; 2 tbsp ground allspice; 2 tbsp ground cinnamon; 1/2 tsp ground cloves; 4 ripe pears peeled,cored and roughly chopped; 2 bramley apples,peeled,cored and roughly chopped; 200g brown rice flour; 100g chestnut flour; 2 pinches salt; 150g unsalted butter, very cold

A warm spicy pudding for winter days. The addition of toffee makes it a bit different from other crumbles. Gluten free

Method

Pre heat oven to 200 degrees cel, gas 6.
Place the sugar in a large saucepan and cook lightly until you have a light caramel.
Add the lemon juice and zest, allspice, cinnamon, cloves, pears,apples,and cook for 5-6 mins.
Place in a 24cm x 3cm deep baking dish.
Place the flours, salt and butter into a food processor and blitz until smooth.
Just pulse in sugar do not overwork.
Spoon over the pear mixture.
Bake for 20-25 mins or until browned and cooked.
Serve with ice cream or custard.
