Spiced Spinach Tofu

The mix of spices makes this tofu dish very tasty. Wheat and gluten free. Vegan.

2.5cm fresh ginger More products
4 garlic cloves More products
2 tsp cumin powder More products
1 tsp coriander seeds More products
1 tsp ground black pepper More products
1/4 tsp ground cinnamon More products
1 tsp chilli powder More products
1/4 tsp ground tumeric More products
sea salt More products
3 tomatoes

Method

  • Heat 2 tbsp of the oil in a saucepan, add the tofu cubes and fry until golden brown.
  • Set aside.
  • Place the spinach in a large saucepan with only the water left clinging to the leaves, cover and cook over a medium heat, shaking the pan often for 5 mins
  • Drain any excess water and set aside.
  • Place the garlic, ginger, cooked spinach, cumin powder, black pepper, cinnamon, chilli powder and salt in a food processor and blend until quite smooth.
  • Set aside.
  • Heat the remaining oil in a saucepan, add the coriander seeds and tumeric powder and fry for 1 min.
  • Add the tomatoes and saute for 4-5 mins then add the spinach mixture and 120ml of water.
  • Bring to boil mixing well then add the fried tofu and cook, stirring for 2-4 mins or until the tofu is heated through.
  • Serve hot over brown rice.
