Indian Style Bean Burritos

If you like all things Indian, the garam masala (Indian hot spice mix) will give this Mexican classic a unique flavour.

1 or about 100g sweet potato, cut into 1/2inch or 1cm cubes More products
1 green bell pepper, sliced thin More products
1 red bell pepper, sliced thin More products
1 yellow bell pepper, sliced thin More products
1 tsp garam masala or more, to taste More products
1/2 cup or 125ml water or homemade vegetable stock
1 tbsp stock paste, if using water, optional

1 iceberg lettuce or lettuce of your choice

Method

  • Let the sliced onion and crushed garlic sit for 10 minutes to enhance their health giving properties.
  • Heat 1 tbsp stock or water in a large skillet and sauté the onion, garlic, ginger, and peppers over a medium heat for about 5 minutes, stirring frequently.
  • Add the garam masala and sweet potatoes and mix.
  • Add the remaining stock or water and the stock paste if using, and cook covered on low heat for about 10 minutes, or until the sweet potatoes are tender.
  • Add the beans.
  • Cook for another 5 minutes, stirring.
  • Season with salt and freshly ground black pepper.
  • While the vegetables are cooking, shred the lettuce.
  • Place vegetable mixture in tortilla and top with cheese, yoghurt or soya yoghurt if using.
  • Roll and top with salsa and shredded lettuce.
