This simple quinoa dish, with plump and sweet dried fruits, makes a great base for a salad or a lovely side for a Christmas meal.

Method

Put your chosen quinoa in a fine sieve and thoroughly rinse it under running cold water.
In a medium size saucepan, heat the olive oil, add the onions and fry gently until they become transluscent.
Add the drained quinoa and fry for a few minutes, stirring continuously.
Add the homemade vegetable stock or the water and the stock pot if using and the mixed vine fruit and cook for about 15 minutes or until all the liquid is absorbed.
Allow to rest covered for at least 5 minutes before fluffing with a fork.
Serve topped with the parsley.
