Fig, Orange and Pistachio Pudding Recipe

This light pudding is unbelievably easy to make. Feel free to replace the fig with any other dried fruits of your choice / that you have in your larder. Serve as is or with a dollop of goats or sheeps yoghurt, or a swirl of almond cream for a vegan, dairy free treat.

2 juicy oranges		More products
150g ready to eat (moist) dried figs*		More products
If you can’t find moist dried figs, use
100g dried figs		More products
soaked in the juice of

for at least 4 hours but ideally overnight in the fridge

Method

Roughly crush the pistachios and dry roast them in a dry frying pan until slightly golden, watching them closely so they don’t burn. Set aside.
Put the oranges and the figs in a high speed blender or food processor and blend until smooth.
Distribute into 4 pretty serving bowls and chill. When ready to serve, add a dollop of goat’s or sheep yoghurt or a swirl of almond cream if you wish and top with the toasted pistachios.
