480ml tinned coconut milk
450g cooked white rice
sugar to taste
1 tsp vanilla extract, check ingredients label
1. Place the coconut milk in a medium sauce pan and heat gently until it comes to a simmer.
2. Add sugar to taste and stir until dissolves then add the cooked rice and bring gently to the boil.
3. Reduce the heat and simmer until it thickens. Do not allow it to dry out too much. Remove from the heat and stir in the vanilla.
