1 clove garlic crushed
1 red pepper diced
1 med onion chopped
1 courgette grated
1 tin chopped toms
150g fresh soya mince
1 tsp mixed herbs
1 tbsp olive oil
2 tsp vege bouillion powder
1 tsp yeast extract
680g mashed potato
Preheat oven to 180 deg cel, or gas mark 4
Saute the onion and garlic in the olive oil, season and add the mixed herbs. Add remaining ingredients except the mash and cook on a med heat for about 20 mins. Spoon the base into an oven proof dish and top with the mashed potato. You can sprinkle a little grated cheese on top if you like. Bake for about 30mins or until golden brown.
