Ingredients: 1 large aubergine; 1 can chickpeas, rinsed and drained; 3 cloves garlic; 60 ml lemon juice; 3 tbsp tahini; dash sea salt; 60 ml olive oil; 2 tbsp fresh chopped parsley (optional)

Baba ganoush is a Middle Eastern spread and dip which is made with aubergine and similar to hummus which is made from chickpeas only. Spread on oatcakes to serve or use as a dip with raw vegetables such as chopped peppers and carrots.

Method

Heat oven to 200 degrees / gas mark 6.
Slice aubergine in half and bake for around 45 minutes or until soft.
When slightly cooled, scoop out the aubergine's creamy flesh. Discard the skin.
In a blender or food processor, combine aubergine, chickpeas, garlic, lemon juice, tahini and salt until smooth.
Slowly blend in the the olive oil until well mixed.
Using a spoon, gently stir in chopped parsley if using.
