Clearspring Organic Sweet White Miso is a short-aged Kyoto style miso with a wonderful creamy richness, and a delicate and slightly salty sweetness. It is ideal for seasoning light soups, and makes a good substitute for dairy ingredients in dips, dressings, sauces and spreads. Try using a little in mashed potato instead of milk, or in creamy soups instead of dairy cream. Sweet white miso is made in small batches to maintain its special quality. Its light colour may darken over time due to natural ageing, but this does not alter its flavour.
Sweet white miso is quite unique amongst miso; it is only fermented for 2-8 weeks, unlike the other miso which are fermented from one summer up to three years. As its name suggests, its colour is paler than other varieties, spanning from white through to yellow or beige. Creamy, rich and slightly sweet, sweet white miso is high in carbohydrates and koji, but lower in soybeans than the darker varieties.
