About Almonds Ground

Ground almonds (also known as almond flour or almond meal) is popular for baking sweets, cakes and biscuits. They add moistness and a rich nutty taste to your favourite recipes. All our ground and flaked almonds are blanched (the brown skin is taken of the almonds before grinding them). The consistency is more like corn meal than wheat flour. It is used in pastry and confectionery - in the manufacture of almond macaroons and other sweet pastries, in cake and pie filling, and is one of the two main ingredients of marzipan and almond paste. In France almond meal is called frangipane and is an important ingredient in the traditional Galette des Rois cake.

Almonds contain protein and the amino acid tryptophan - which is a proven mood booster.

Real Foods Vintage Christmas Cake Recipe

Summary: Many traditional Christmas cake recipes recommend maturing the cake over 2-3 months. Of course many recipes are also made with a whole host of ingredients that bakers today can’t use, such as wheat (containing gluten), dairy and eggs. This vintage Real Foods recipe allows you to cater for a modern world full of food intolerances that weren’t so prevalent even just a decade ago. Here's some advice that was given out with our original Vintage recipe: Don't just follow this recipe! Be adventurous ... use coconut, chestnut flour, cashews, hazels, pecans, sunflower or sesame seeds, apple rings or peaches or pears ... just remember to keep proportions of dry goods and liquids correct.

Wheat and Dairy Free Chocolate, Orange, Almond And Polenta Cake Recipe

Summary: This is a recipe entered in our October 2014 Real Free-From Baking Competition, contributed by Julie Kealy: This is our new favourite cake – including my husband, who loves chocolate cake but does not need to be wheat and dairy free. It can be made as a plain cake, dusted with icing sugar, but also worth trying the ganache – it’s amazing and you’d never guess the hidden ingredient!

Leah Houghton I use ground almonds as a gluten free flour substitute in baking. Much more nutritious than wheat flour, works for pales diet too.
Alice Farmer I use these ground almonds where the recipe asks for almond flour and it works really well. The Chewy Almond Cookies are great.
