About Organic Rapadura Sugar

The always popular brand Biona have brought out a new size of their delicious Rapadura sugar. . This "wholefood sugar" captures the sweet essence of unrefined cane juice. Delicious caramel flavour and fine grained texture. Rapadura is the pure juice extracted from sugar cane (using a press). Rapadura sugar is higher than other sugars in several essential minerals, including potassium, magnesium, calcium and phosphorus.

Using rapadura for darker-coloured baked goods can lend extra richness to the food, or you can use rapadura to sweeten and season savoury dishes, such as stews and marinades.

You could use cornflour instead if you can not get kudzu, but while cornflour is low on nutritional value, the Japanese use kuzu in the same way we use Echinacea : it helps prevent colds, promotes good digestion, helps to ease aches and pains, and is even used in a hangover remedy, along with umeboshi plum, grated ginger and lemon juice. Not bad for a cake ingredient … And finally, please feel free to substitute the gluten-free flour for the flour of your choice. Spelt flour, for example, makes a more dense and nutty cake.
