About Organic Arran Victory Potato

Arran Victory, the oldest of the 'Arrans' still grown, was named in 1918 in celebration of the ending of the war. This Main crop potato is rare, blue skinned and high yielding given a long season. It needs to be boiled very gently but you are rewarded with an exceptional flavour for mash, which crisps beautifully on a Shepherd's Pie! Despite the potatoes popular reputation as a high-carbohydrate, white starch food, they are in fact an exceptionally healthful low calorie, high fibre food that offers protection against cardiovascular disease and cancer. Potatoes also contain a variety of phytonutrients that have antioxidant activity. They are also a good source of vitamin B6, copper, potassium and manganese.

Be careful with these potatoes - they really do need to be cooked very gently or they simply dissolve in to the water you are cooking them in. If you keep your eye on the cooking process through the results are very good. They are also good for using as thickeners in a casserole because of their disintegration properties.
