About Organic Salsify

With a delicate, distinctive flavour likened to oysters and asparagus, these Slender, parsnip like roots with white skin and flesh are also known as purple or common salsify, oyster plant, vegetable oyster, Jerusalem star] goatsbeard or simply salsify. Salsify can be used in a similar way to any other root vegetable - add it to soups and stews, or serve it mashed. Alternatively, try adding cooked, grated, delicately flavoured salsify to salads. It's easier to peel salsify after it's been boiled.

Thanks for the tip about peeling after cooking - it has made my life much easier! We add this to salads on a regular basis as it adds  interesting flavour and texture reducing the need for high calorie dressings.

Roasted Carrots and Salsifies Recipe

Summary: The simplest way to prepare salsify is to roast them, drizzled with some good quality olive oil, a whole garlic head, a few bay leaves and a small bunch of fresh thyme. Leave their very much edible skins on for extra nutrition, but if you do peel them, try to do as and soak them in cold water with a little vinegar to stop the delicate cream flesh from browning. Pair them with carrots or your favourite root vegetables for a lovely side dish.
