About Organic Butternut Squash

Butternut is a type of winter squash. It has a sweet, nutty taste similar to that of a pumpkin. It has yellow skin and orange fleshy pulp. When ripe, it turns increasingly deep orange, and becomes sweeter and richer.

Butternut Squash is very low in saturated fat, cholesterol and sodium. It is also a good source of Dietary Fibre, Vitamin E (Alpha Tocopherol), thiamine, Niacin, Vitamin B6, Folate, Calcium and Magnesium, and a very good source of Vitamin A, Vitamin C, Potassium and Manganese.

For us butternut squash is a gourmet item, and those from real foods are the cream of the crop. No two real foods squash ever taste the same - slight variations in sweetness, colour and texture - and they are all simply delicious.
I roast then in a light coating of organic olive oil with organic sunflower seeds scattered on the bottom of the roasting tin, and serve with organic polenta (also roasted separately in organic olive oil with a slice of organic salted butter), lightly boiled broccoli and cubes of feta cheese. This is a regular on our supper menu and was our Christmas dinner last year!
