Pepper has a warm and intense spicy flavour. Freshly ground black peppercorns give the best flavour but ground pepper is a useful quick alternative. Add ground black pepper at the end of cooking to create a maximum effect. The warm and spicy flavour creates and intense result. Use whole peppercorns in dishes such as casseroles to add flavour (but remember to take them out afterwards!)
Pepper comes from the dried berries of a flowering vine, they are native to South India but are now cultivated in other areas of the world including Sri Lanka and Malaysia. Peppercorns are picked from the vine when they are green, and they are dried until they turn the familiar black shade. One of the oldest and most popular spices in the world, pepper has been used in Indian cooking since at least 2000BC.
