Baking Soda is what Bicarbonate of Soda is known as in the U.S.A., where Bob's Red Mill is based. Also known as sodium bicarbonate, this is an incredibly useful ingredient as a top quality leavening agent, used in combination with buttermilk, cocoa, molasses and other acidic ingredients for baking.
