Soak 3 tablespoons to 100g of seeds in lukewarm water (about 30C) for 12 to 18 hours. - Drain and rinse. - Fill 1 or several seed trays with good quality compost about 2 cm deep. - Sprinkle the seeds evenly. - Keep the seed trays at room temperature for 2 to 3 days, lightly watering every day, just enough to keep the compost moist. At this stage you don't want to expose them to light too much. You might even cover the seed trays with a tray or folded newspaper. - On day 3 or 4, put the seed trays in a bright spot, next to a window for example. - After 10 to 14 days the greens will be 7 to 10cm high and at their optimum nutritional value. That is when they are ready to harvest and eat. - Cut them above the compost, using kitchen scissors, and rinse them before eating. Grow your own fresh sunflower greens right through the year, a delicious addition to salads, sandwiches, stir-fries or for juicing. Sunflower greens are rich in protein, chlorophyll, vitamins, especially B and E, and minerals: potassium, iron, calcium and magnesium. Supplied with growing instructions, 200g is enough to grow approximately 10 trays of fresh sunflower greens with a growth time of 10-14 days.
