Buckwheat is actually related to sorrell and rhubarb, it is not a grass (wheat is). It is naturally gluten free, and this Amisa crispbread has approved gluten free status, it is produced in a dedicated gluten free bakery and batch tested for gluten (less than 20 parts per million). High protein buckwheat flour is being studied for possible use as a functional ingredient in foods to reduce plasma cholesterol, body fat, and cholesterol gallstones.
