How to prepare spring roll wrappers: Fill a shallow baking tray or large bowl with hot water and place a pancake into the water until it is soft and pliable. Remove pancake and place on a wet tea towel and blot till slightly sticky. Place your filling in the middle of pancake and fold bottom up and over the filling. Fold in sides totally covering filling. Then roll upwards to form a tidy pancake roll. Serve immediately for fresh spring rolls or deep fry for approx 2 minutes for hot crispy spring rolls.
These can be frozen although it is not recommended for best results.
