The Vindaloo is a creation of the Portuguese-Indian community in Goa. It derives from the Portuguese words for wine (vinho) and garlic (alhos). It is widely believed that vindaloo originally was made with wine, but wine that had become a little vinegary on its trip from Lisbon in Portugal. It probably began as a simple Indian stew for the Portuguese colonists, however it is now a symbol of a truly fiery Indian curry.
